For the Meatballs:
- 2 (16 oz.) bags of frozen turkey meatballs
For the Onion Mixture:
- 2 white onions, thinly sliced
- 2 cloves garlic, minced
- 3 tbsp butter
- 2 tbsp sherry, divided
- 1/2 tbsp fresh thyme leaves, plus more for topping
- 2 cups beef broth
- 2 cups shredded gruyere cheese
- Salt and pepper to taste
Instructions
- In a skillet over medium heat, melt the butter. Add 2 tbsp of sherry and onions. Season with salt and pepper. Sauté for about 10 minutes, stirring occasionally.
- Add thyme and cook for another 5 minutes.
- Introduce garlic and cook for 1 more minute, stirring frequently.
- Transfer the mixture to the Crock-Pot.
- Add frozen meatballs and beef broth. Stir and cover.
- Cook on low for 3.5-4 hours.
- Adjust seasoning with salt and pepper if necessary.
- Stir in 2 tbsp sherry and top with gruyere cheese. Cover and cook for an additional 10-13 minutes.
- Sprinkle with fresh thyme leaves before serving.
