These Crock-Pot French Onion Meatballs are a delicious twist on a classic dish, combining tender turkey meatballs with savory caramelized onions, rich gruyere cheese, and aromatic thyme. For the Meatballs:

  • 2 (16 oz.) bags of frozen turkey meatballs

For the Onion Mixture:

  • 2 white onions, thinly sliced
  • 2 cloves garlic, minced
  • 3 tbsp butter
  • 2 tbsp sherry, divided
  • 1/2 tbsp fresh thyme leaves, plus more for topping
  • 2 cups beef broth
  • 2 cups shredded gruyere cheese
  • Salt and pepper to taste

Instructions

  1. In a skillet over medium heat, melt the butter. Add 2 tbsp of sherry and onions. Season with salt and pepper. Sauté for about 10 minutes, stirring occasionally.
  2. Add thyme and cook for another 5 minutes.
  3. Introduce garlic and cook for 1 more minute, stirring frequently.
  4. Transfer the mixture to the Crock-Pot.
  5. Add frozen meatballs and beef broth. Stir and cover.
  6. Cook on low for 3.5-4 hours.
  7. Adjust seasoning with salt and pepper if necessary.
  8. Stir in 2 tbsp sherry and top with gruyere cheese. Cover and cook for an additional 10-13 minutes.
  9. Sprinkle with fresh thyme leaves before serving.
