- 2 cups shredded Mozzarella and Provolone Cheese (or shredded Gruyere cheese)
Instructions
- Heat the skillet: Place a heavy-bottomed skillet over medium-high heat and add 2 tablespoons vegetable oil, swirling to coat evenly.
- Sear beef: Add 1 pound of beef stew meat and break into smaller pieces. Season with 1 ½ teaspoons ground black pepper. Sear the meat on one side until brown and it lifts easily, about 1-2 minutes, then brown the other side similarly. Remove from heat. Note: This is to brown the meat, not cook through.
- Prepare crockpot: Spray the bottom of a 5-6 quart crockpot with non-stick spray to prevent sticking.
- Add onions: Layer the thinly sliced yellow onion evenly at the bottom of the crockpot.
- Add beef: Place the browned beef tips evenly on top of the onions.
- Add seasoning mixes: Sprinkle 1 packet of low sodium Au Jus sauce mix evenly over the beef, then evenly sprinkle 1 packet of Beefy Onion Soup Mix over the top.
- Pour soup: Pour 1 (10.5 ounce) can of French Onion Soup over all ingredients in the crockpot.
- Add butter: Distribute 5 tablespoons sliced unsalted butter evenly over the top.
- Slow cook: Cover and cook on low for 4 to 6 hours, or until the beef is tender.
- Add cheese: About 30 minutes before the cooking time ends, sprinkle 2 cups shredded Mozzarella and Provolone Cheese over the beef. Cover and allow the cheese to melt before serving.

- Use low sodium Au Jus and soup mixes if you need to control salt intake.
- The initial searing of beef helps develop richer flavor but does not cook the meat completely.
