Ingredients
Scale
Beef and Searing
- 2 Tablespoons butter (can use salted or unsalted)
- 2 pounds beef stew meat (cut up any really large pieces)
Aromatics
- 1 small yellow onion, thinly sliced
- 2 cloves garlic, minced
Sauce Mix
- 1 packet brown gravy mix (low sodium if possible)
- 1 packet onion soup mix (low sodium if possible)
- 1 cup Coca Cola
- 1 cup low or no sodium beef broth
- 1 Tablespoon Worcestershire sauce
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
Thickening
- 1 Tablespoon cornstarch
- 2 Tablespoons water
Seasoning and Garnish
- Salt and black pepper (optional, to taste)
- Dried or fresh parsley (for garnish, optional)
Instructions
- Prepare the skillet: In a large skillet, melt 2 Tablespoons butter over medium-high heat until hot and bubbling.
- Sear the beef: Add the beef stew meat in batches and sear until browned on all sides, about 3–4 minutes per batch. Add more butter or oil if needed. The goal is to develop color, not to cook through.
- Transfer to crock pot: Once all beef is browned, place it into a 5-6 quart crock pot evenly.
- Add aromatics: Layer the thinly sliced onion and minced garlic evenly on top of the beef in the slow cooker.
- Mix the sauce: In a medium bowl or large measuring cup, whisk together brown gravy mix, onion soup mix, Coca Cola, beef broth, Worcestershire sauce, onion powder, and garlic powder until smooth. Stir carefully as the soda will fizz up.
- Combine in crock pot: Pour the soda mixture evenly over the beef and onions. Give everything a gentle stir to combine the flavors.
- Slow cook: Cover and cook on LOW for 7–8 hours or HIGH for 4 hours until the beef is fork-tender. Avoid removing the lid during cooking to maintain moisture and tenderness.
- Thicken the sauce (optional): In a small bowl, whisk cornstarch with water until smooth. Stir into the crock pot, increase heat to HIGH, and cook for an additional 15 minutes until sauce thickens. Adjust salt and pepper to taste.
- Garnish and serve: Sprinkle with dried or fresh parsley if desired. Serve the beef tips and gravy over mashed potatoes, rice, or egg noodles for a hearty meal.
Notes
- Searing the beef before slow cooking enhances the flavor by creating a rich caramelized exterior.
- Use low sodium mixes and broth to control the salt level in the dish.
- Avoid lifting the crock pot lid while cooking to ensure the beef remains tender and the cooking time stays accurate.
- The thickening step is optional but recommended for a richer, thicker gravy.
- Leftovers store well refrigerated for up to 3 days and reheat gently on the stovetop.
