Carrots:
- 6 medium carrots, peeled
Seasoning:
- 2 tablespoons extra virgin olive oil
- ½ teaspoon kosher salt
- 2 teaspoons garlic, minced
- ½ teaspoon onion powder
- ½ teaspoon red pepper flakes
- 1 teaspoon fresh rosemary, chopped
Cheese Topping:
- 2 cups (200 g) parmesan cheese, grated, divided
Garnish:
- Parsley, chopped for garnish
Instructions
- Preheat oven: Line a baking sheet with parchment paper.
- Prepare carrots: Preheat oven to 400°F. Cut carrots crosswise and in half.
- Mix seasoning: In a large bowl, combine olive oil, salt, garlic, onion powder, red pepper flakes, and rosemary. Toss carrots in the mixture.
- Add cheese: Sprinkle 1 ½ cups of parmesan cheese on parchment paper. Place carrots on top, cut side down. Sprinkle remaining cheese on top.
- Bake: Bake for 30-35 minutes until carrots are tender. Serve warm, garnished with parsley.
