Carrots:

  • 6 medium carrots, peeled

Seasoning:

  • 2 tablespoons extra virgin olive oil
  • ½ teaspoon kosher salt
  • 2 teaspoons garlic, minced
  • ½ teaspoon onion powder
  • ½ teaspoon red pepper flakes
  • 1 teaspoon fresh rosemary, chopped

Cheese Topping:

  • 2 cups (200 g) parmesan cheese, grated, divided

Garnish:

  • Parsley, chopped for garnish

Instructions

  1. Preheat oven: Line a baking sheet with parchment paper.
  2. Prepare carrots: Preheat oven to 400°F. Cut carrots crosswise and in half.
  3. Mix seasoning: In a large bowl, combine olive oil, salt, garlic, onion powder, red pepper flakes, and rosemary. Toss carrots in the mixture.
  4. Add cheese: Sprinkle 1 ½ cups of parmesan cheese on parchment paper. Place carrots on top, cut side down. Sprinkle remaining cheese on top.
