Instructions

  1. Mix the Base Ingredients: In a large bowl, whisk together the shredded mozzarella, grated Parmesan, almond flour, eggs, Italian seasoning, garlic powder, onion powder, sea salt, and black pepper. Stir in 1 tablespoon of olive oil until well combined.
  2. Incorporate the Ground Chicken: Gently fold in the ground chicken, mixing just enough to combine the ingredients without overworking the meat, which keeps the patties tender and juicy.
  3. Shape the Patties: Divide the mixture into 16 equal portions. Shape each portion into a small patty about 3/8 inch thick. For easy transfer to the pan, place the patties on parchment paper and cut the paper around each to keep their shape intact.
  4. Preheat the Skillet: Heat 2 tablespoons of olive oil in a large nonstick skillet over medium heat for approximately 2 minutes until the oil shimmers, signaling it’s hot enough for cooking.
