Ingredients
Scale
Cheese & Dry Ingredients
- 1 cup shredded Mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup Wholesome Yum Blanched Almond Flour
- 1 tablespoon Italian seasoning
- 1/2 teaspoon Garlic powder
- 1/2 teaspoon Onion powder
- 3/4 teaspoon Sea salt (or 1/2 teaspoon for less salt)
- 1/4 teaspoon Black pepper
Wet Ingredients & Meat
- 2 large Eggs
- 2 tablespoons Olive oil (divided, plus extra as needed for cooking)
- 2 pounds Ground chicken (93% lean recommended)
Instructions
- Mix the Base Ingredients: In a large bowl, whisk together the shredded mozzarella, grated Parmesan, almond flour, eggs, Italian seasoning, garlic powder, onion powder, sea salt, and black pepper. Stir in 1 tablespoon of olive oil until well combined.
- Incorporate the Ground Chicken: Gently fold in the ground chicken, mixing just enough to combine the ingredients without overworking the meat, which keeps the patties tender and juicy.
- Shape the Patties: Divide the mixture into 16 equal portions. Shape each portion into a small patty about 3/8 inch thick. For easy transfer to the pan, place the patties on parchment paper and cut the paper around each to keep their shape intact.
- Preheat the Skillet: Heat 2 tablespoons of olive oil in a large nonstick skillet over medium heat for approximately 2 minutes until the oil shimmers, signaling it’s hot enough for cooking.
- Cook the Patties: Carefully place the chicken patties into the hot skillet in a single layer. If using parchment, flip each patty onto the pan and peel off the paper immediately. Cook the patties for 3 to 4 minutes on each side until they are golden brown and cooked through.
- Repeat Cooking Remaining Patties: Continue cooking the remaining patties in batches, adding more olive oil to the skillet as needed to achieve a nice sear and prevent sticking.
- Rest Before Serving: After cooking, let the patties rest for 5 to 10 minutes. This resting period helps lock in the juices, ensuring they remain juicy and flavorful when served.
Notes
- Use 93% lean ground chicken for the best balance of juiciness and texture.
- Do not overmix the ground chicken with the other ingredients to keep patties tender.
- Shaping patties on parchment paper makes transferring to the pan easier and keeps their shape way neater.
- Adjust salt quantity according to your preference, starting with 1/2 teaspoon if you want less sodium.
- Resting cooked patties is essential for juicy results.
- Extra olive oil can be added between batches to ensure good browning and prevent sticking.
