Ingredients

Ground Turkey:

1.5 lbs

Carrots:

2, chopped

Celery:

2 stalks

Onion:

1 small, diced

Butter:

2 tbsp

Pumpkin Puree:

15 oz

Diced Tomatoes:

14.5 oz

Chicken Broth:

2 cups

Navy Beans:

15 oz, drained and rinsed

Cannellini Beans:

15 oz, drained and rinsed

Spinach Leaves:

1 cup, chopped

Thyme:

1 tbsp, fresh

Chili Powder:

2 tbsp

Sugar or Honey:

2 tbsp

Sour Cream:

2 tbsp

Salt and Pepper:

to taste


Instructions

  1. Sauté aromatics: Melt butter in a dutch oven over medium-high heat. Add carrots and cook for 3 minutes, stirring frequently. Add celery and cook for 3 minutes. Add onions and cook until translucent.
  2. Cook turkey: Add ground turkey to the dutch oven and cook thoroughly (about 8-10 minutes).
  3. Create broth: Add pumpkin puree, tomatoes, beans, chicken broth, spinach, spices, and sweetener. Bring to a boil. Stir in sour cream and remove from heat.
  4. Season: Taste and adjust with salt and pepper.
  5. Serve: Spoon into bowls and serve!
