Ingredients
Scale
For the Pudding
- 1 tbsp unsalted butter (for greasing)
- 4 cups milk (full or reduced fat)
- 1/3 cup white sugar
- 2 tsp vanilla extract
- 3/4 cup medium grain white rice, uncooked
- 1/2 cup sultanas or raisins
- 3/4 tsp cinnamon
Finishing
- 1/2 cup thickened/heavy cream (or a bit of butter as an alternative)
Instructions
- Preheat the oven: Set your oven to 180°C (350°F) for all types of ovens to prepare for baking the rice pudding evenly.
- Grease the baking dish: Lightly butter a 10 cup or larger casserole dish ensuring the rice pudding won’t stick during baking.
- Simmer milk mixture: In a saucepan over medium-high heat, combine milk, sugar, and vanilla extract. Stir frequently and bring to a gentle simmer where the surface becomes foamy but avoid boiling to prevent the milk from splitting.
- Prepare rice mixture: Place uncooked rice, sultanas or raisins, and cinnamon into the greased casserole dish. Pour the simmered milk mixture over and give it a brief stir to combine evenly.
- Bake the pudding: Cover the dish with a lid or foil and bake in the preheated oven for 1 hour, stirring every 20 minutes to prevent rice from settling and forming a crust on the bottom.
- Add cream and stir: Remove the dish from the oven and stir in the heavy cream (or a bit of butter). The pudding will appear slightly watery at this point but it will thicken quickly.
- Serve: Enjoy the pudding immediately, either plain or with a scoop of vanilla ice cream for an indulgent finish.
Notes
- Use medium grain white rice for the creamiest texture.
- Milk can be full fat or reduced fat; avoid boiling to maintain smoothness.
- Sultanas or raisins add a natural sweetness and texture contrast.
- Stirring regularly during baking prevents rice from sticking to the base and helps even cooking.
- The pudding is best served immediately as it thickens on cooling.
- Optional topping with vanilla ice cream elevates this classic dessert.
