Sugar Mixture:
- 1/3 cup sugar
- 1 tsp freshly grated orange peel
Cookies:
- 1 cup sugar
- 3/4 cup butter (softened)
- 1 egg
- 2 cups flour
- 1 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/2 cup dried cranberries (chopped)
- 1 Tbsp freshly grated orange peel
Instructions
- Sugar Mixture: Combine all sugar mixture ingredients in a small bowl and stir until well mixed. Set aside.
- Cookies:
1. Preheat oven to 350 degrees.
2. In a bowl, combine 1 cup sugar, butter, and egg. Beat until just combined and creamy.
3. Reduce speed and add flour, baking powder, and baking soda. Beat until half combined, then add orange peel and cranberries. Mix until just combined.
4. Shape dough into one inch balls and roll in sugar mixture.
5. Place on ungreased cookie sheet about 2 inches apart.
6. Bake for 7-11 minutes until edges are lightly browned. Do not over bake.
7. Cool for 1 minute before removing from the cookie sheet.
