Instructions

  2. Sear the chicken: Heat olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 6 to 7 minutes on each side or until golden brown and cooked through. Transfer to a plate and cover to keep warm.
  3. Cook the onions: In the same skillet, add the finely diced onion, adding a bit more olive oil if necessary, and cook for 2 to 3 minutes until the onions are softened and translucent.
  4. Make the cranberry sauce: Stir in fresh cranberries, orange juice, maple syrup, and balsamic vinegar into the skillet. Simmer uncovered for 8 to 10 minutes, stirring occasionally until the cranberries break down and the sauce thickens to a jam-like consistency.
  5. Reheat chicken and add cheese: Return the cooked chicken and any accumulated juices back to the skillet. Let it simmer for another 1 to 2 minutes to heat through.
