Toppings
- 6 tbsp. store-bought blueberry flax granola (such as Playanola or Kind), divided
- 5 fresh strawberries, sliced
- 1 banana, sliced
- 2 tbsp. unsweetened coconut flakes
Nutella Drizzle
- 2 tbsp. Nutella or other chocolate-hazelnut spread
Instructions
- Blend Acai Mixture: In a blender, combine the frozen unsweetened acai puree, light agave nectar, monk fruit sweetener, fresh lime juice, and 1/4 cup cold water. Blend until the mixture is smooth but still thick and spoonable. If the mixture is too thick to blend or spoon easily, add up to 1 tablespoon of additional water slowly and continue blending until the desired consistency is achieved.
- Assemble Bowl Base: Place 4 tablespoons of blueberry flax granola into a medium bowl to create a crunchy base. Pour the prepared acai mixture on top of the granola evenly, making sure to retain a thick consistency.
- Add Fruit and Coconut Toppings: Layer the sliced fresh strawberries and banana over the acai blend. Sprinkle the unsweetened coconut flakes evenly on top to add texture and a subtle tropical flavor.
- Prepare Nutella Drizzle: Transfer 2 tablespoons of Nutella or chocolate-hazelnut spread to a small heatproof bowl. Microwave in 15-second increments, stirring in between, until the Nutella becomes runny and easy to drizzle, about 30 seconds total.
