- 1 1/2 Cup (375 ml) almond milk
- 1–2 tsp maple syrup
- 4 tbsp chia seeds
- 1–2 tsp cinnamon
- 1/2 tsp vanilla bean paste or 1/2 tsp vanilla extract
Toppings
- Vanilla yoghurt (quantity as desired for topping)
- Cinnamon (for dusting)
Instructions
- Mix Ingredients: Add the almond milk, maple syrup, chia seeds, cinnamon, and vanilla bean paste or extract into a bowl. Stir well to combine all the flavors evenly.
- Wait and Stir: Let the mixture sit for 5 minutes, then stir again to prevent clumping of chia seeds and help them start to absorb the liquid.
- Chill the Pudding: Cover the bowl and refrigerate for at least 4 hours or preferably overnight, allowing the chia seeds to fully absorb the liquid and thicken to a pudding consistency. Taste and adjust sweetness with more maple syrup if desired before chilling.
- Serve: Spoon the thickened chia pudding into serving containers. Top with a generous dollop of vanilla yoghurt and a light dusting of cinnamon for that signature cinnamon roll flavor. Enjoy chilled.
