Egg Mixture
- 2 large eggs (or 3 small eggs)
- 1/4 cup milk
- Pinch of salt
Cinnamon Sugar Coating
- 1/4 cup white sugar
- 1/2 tsp cinnamon powder

- 3 tbsp butter, separated

- Maple syrup (not optional!)
Instructions
- Prepare the bread: Cut the crust off each slice of bread, then cut each slice into 9 equal cubes to create bite-sized pieces.
- Make the egg mixture: In a medium bowl, whisk together the eggs, milk, and a pinch of salt until well combined.
- Mix cinnamon sugar: In a shallow bowl, combine the white sugar and cinnamon powder.
- Melt butter: Heat 1 1/2 tablespoons of butter in a frying pan over medium-high heat. Ensure the butter melts without browning.
- Coat and cook first half: Quickly toss half of the bread cubes into the egg mixture, shaking off excess. Place them in the buttered pan and use a wooden spoon to gently sauté, turning frequently, until all sides are golden brown, about 2 to 3 minutes.
- Coat with cinnamon sugar: Remove the cooked bread cubes from the pan and immediately toss them in the cinnamon sugar mixture to coat evenly. Transfer to a plate.
- Repeat for remaining bread cubes: Add remaining butter if needed, then repeat the coating and cooking process with the second half of the bread cubes.
- Serve: Serve the warm cinnamon French toast bites immediately with maple syrup for dipping.

- Using slightly stale bread helps the bites hold their shape and absorb the egg mixture better.
- Don’t let the butter brown during cooking to avoid a burnt taste.
