For the Waffles:

  • 2 Cups Water
  • 1 Cup Butter (divided)
  • 1 3/4 Cups Sugar (divided)
  • 1 3/4 Tablespoons Cinnamon (divided)
  • 2 Cups All-Purpose Flour
  • 4 Eggs
  • 1 Tablespoon Vanilla Extract

For Coating:

  • 1/2 cup Butter
  • 1 1/2 tablespoons Cinnamon
  • 1 1/2 cups Sugar

Instructions

  1. Prepare the Waffle Batter: In a medium bowl, whisk together the flour and 1/2 teaspoon of cinnamon. Set aside.
  2. Make the Dough: In a saucepan, combine water, 1/2 cup of butter, and 1/4 cup of sugar. Bring to a boil, then lower heat. Add this mixture to the flour and cinnamon, stirring until fully incorporated. Let the dough cool for 7-10 minutes.
  3. Add Flavor: Mix in vanilla extract and eggs to the dough using a hand mixer until combined.
  4. Cook the Waffles: Preheat waffle iron and coat with non-stick spray. Pour 3 tablespoons of batter per waffle and cook until golden brown.
  5. Coat with Cinnamon Sugar: Melt 1/2 cup of butter. Combine remaining cinnamon and sugar in a separate bowl. Dip cooked waffles in butter, then coat with cinnamon sugar.
