Description

Instructions

  1. Preheat Oven: Preheat your oven to 100°C (210°F) and prepare two baking sheets by lining them with baking parchment or silicone baking mats.
  2. Whisk Egg Whites: Place the egg whites in a large bowl and whisk using a handheld mixer or stand mixer with balloon whisk attachment until they begin to stiffen, approximately 3-4 minutes.
  3. Add Initial Ingredients: Gradually add half of the caster sugar, cream of tartar, and vanilla or peppermint extract, then continue whisking to combine thoroughly.
  4. Finish Meringue Batter: Add the remaining sugar and whisk on medium-high speed until the mixture is thick, smooth, glossy, and forms stiff peaks—this should take about 6-8 minutes. Add green food colouring gel and mix gently until evenly distributed.
  5. Test Texture: Rub a small amount of the meringue between your fingers; it should feel smooth. If grainy, continue whisking until smooth.
  6. Pipe Meringues: Transfer the meringue into a piping bag fitted with a 1cm star nozzle. Pipe tall swirl shapes onto the prepared baking sheets, leaving 2-4 cm space between each. Decorate with red, green, and white sprinkles.
  7. Bake: Bake the meringues for 1 hour at the preheated temperature.
  8. Cool Slowly: After baking, turn off the oven and leave the meringues inside to cool completely to prevent cracking. Ideally, allow them to cool overnight in the oven.
  9. Serve: Once fully cooled, carefully remove the meringues from the baking parchment and serve as delightful holiday treats.

  • Ensure no yolk is in the egg whites as it will prevent proper whisking.
