Description

This Chocolate-Covered Strawberry Greek Yogurt Bark is a delightful and healthy frozen treat combining creamy Greek yogurt, sweet strawberries, and rich chocolate. Perfect for a refreshing dessert or snack, it is naturally sweetened with pure maple syrup and offers a satisfying crunch with the berry and chocolate mix.

Ingredients

Scale

Greek Yogurt Base

  • 1 1/2 cups plain Greek yogurt, 2% or higher
  • 2 tbsp pure maple syrup
  • 1/2 tsp vanilla extract

Chocolate Strawberry Topping

  • 1 cup strawberries, diced, divided
  • 1 cup semi-sweet chocolate chips
  • 1/2 tbsp coconut oil

Instructions

  1. Prepare Greek Yogurt Mixture: In a mixing bowl, combine the plain Greek yogurt, pure maple syrup, and vanilla extract until smooth and evenly mixed.
  2. Spread Yogurt: Line a baking sheet with parchment paper and spread the yogurt mixture into a single, even layer using a spatula. Set aside.
  3. Melt Chocolate: In a microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil. Microwave in 30-second intervals, stirring thoroughly after each until fully melted and smooth.
  4. Add Strawberries to Chocolate: Quickly fold 3/4 of the diced strawberries into the melted chocolate to coat them before the chocolate hardens.
  5. Assemble Bark: Spread the chocolate-strawberry mixture evenly over the layer of Greek yogurt on the baking sheet. sprinkle the remaining diced strawberries on top, and optionally add a few pinches of flaky sea salt for enhanced flavor.
  6. Freeze: Place the baking sheet in the freezer and freeze for at least 4 hours, or until completely hardened.
  7. Serve and Store: Once frozen, cut the bark into pieces with a knife or break apart with your hands. Store the bark pieces in a freezer-safe container or bag for easy access.

Notes

  • Use Greek yogurt with at least 2% fat to ensure a creamy texture that holds well when frozen.
  • For dairy-free or vegan options, substitute the Greek yogurt with a plant-based yogurt alternative and ensure the chocolate is dairy-free.
  • Flaky sea salt is optional but adds a nice contrast to the sweetness.
  • Adjust the sweetness by adding more or less maple syrup according to taste.
  • Store the bark pieces in the freezer to keep them firm and fresh.
