Cookie Dough

  • 1/4 tsp salt
  • 12 tbsp water, if needed
  • 1 1/2 cups (211g) mini chocolate chips

Chocolate Coating

  • 16 oz chocolate melting chocolate
  • 3 oz white melting chocolate

Instructions

  1. Cream the Butter and Sugars: In a large mixer bowl, beat the unsalted butter, light brown sugar, and sugar on medium speed until the mixture is light in color and fluffy, about 2-3 minutes. The change in color is a sign it’s ready.
  2. Add Vanilla Extract: Pour in the vanilla extract and mix until well incorporated into the butter-sugar mixture.
  3. Combine Dry Ingredients: Add the heat-treated all-purpose flour and salt to the bowl and mix until just combined. If the dough appears too crumbly, add 1-2 tablespoons of water to help it come together when pressed into balls.
  4. Fold in Chocolate Chips: Using a silicone spatula, gently fold in the mini chocolate chips until evenly distributed throughout the cookie dough.
  5. Shape Dough into Footballs: Use a 1 1/2 tablespoon cookie scoop to portion out the dough. Then, with your fingers, shape each portion into a football shape, placing them on a plate or cookie sheet as you go.
