Chicken Mixture
- 1 large chicken breast, cubed

- 2 scallions, chopped

- 1 tsp kosher salt
- ⅓ cup Parmigiano Reggiano, grated

- 4 thick pitas, cut in half
- Romaine hearts, chopped (to taste)

Caesar Dressing
- 1 egg yolk
- 1 tsp Dijon mustard
- ½ garlic clove
- 3 anchovies
- ¼ cup Parmigiano Reggiano, freshly grated (+ more for shaving over salad)
- ¼ tsp Worcestershire sauce
- 1–2 squirts of Tabasco sauce
- 1 dash of Maggi seasoning
- ½ lemon (juice and zest, adjust to taste + more for serving)
- ½ cup olive oil
- Salt and pepper, to taste
Instructions
- Prepare the Dressing: In a bowl, combine the egg yolk, Dijon mustard, garlic, and anchovy paste. Mix well until smooth. Add the freshly grated Parmigiano Reggiano, Worcestershire sauce, Tabasco, Maggi seasoning, and a small squirt of lemon juice. Taste and adjust the lemon juice to your preference. Whisk in the olive oil gradually, emulsifying until the dressing is thick and smooth. Season with salt and pepper to taste.
- Make the Chicken Mixture: Place the cubed chicken breast and thighs into a food processor along with the chopped serrano, scallions, lemon zest, white pepper, garlic powder, onion powder, kosher salt, and ⅓ cup Parmigiano Reggiano. Process until the mixture is smooth and well combined, resembling a coarse paste.
- Prepare Pitas: Cut each pita bread in half to form pocket-sized rounds for the tacos.
- Assemble the Tacos: Evenly divide the smashed chicken mixture onto the cut side of each pita half. Spread the mixture out evenly to cover the surface.
- Sear the Tacos: Lightly drizzle olive oil on the chicken side of each pita. Preheat a griddle or skillet over medium-high heat and place the pitas chicken-side down. Press down with a spatula to compact and ensure even browning. Cook for about 5 minutes until golden and crispy.
- Prepare the Caesar Salad Topping: Finely chop the romaine hearts. Toss with the prepared Caesar dressing until the lettuce is well coated.
- Serve the Tacos: Top each seared chicken smash taco with a generous portion of Caesar salad. Garnish with extra shaved Parmigiano Reggiano and freshly cracked black pepper. Serve with lemon slices on the side for an added burst of freshness.
