This Cherry Almond Mascarpone Dip is a luscious and creamy dessert dip featuring smooth mascarpone cheese blended with whipped cream, almond extract, and powdered sugar, topped with a sweet and slightly tart cherry syrup. Perfect for serving as a dip with fruits, cookies, or crackers, or as a decadent topping over ice cream, this elegant no-bake treat combines indulgent flavors with simple preparation.
Ingredients
Scale
Cherry Syrup
- 1 cup cherries, stems removed
- 3 tablespoons granulated sugar
Mascarpone Almond Dip
- 1 1/5 cups heavy whipping cream (ideally without carrageenan)
- 6 ounces mascarpone cheese, room temperature (3/4 of an 8oz container)
- 1/4 cup powdered sugar
- 1/2 teaspoon almond extract
Instructions
- Prepare Cherry Syrup: In a small saucepan over medium heat, combine the cherries and granulated sugar. Stir to coat the cherries evenly with sugar. Cook for about 5 minutes, stirring occasionally.
- Mash Cherries: Once the cherries soften, mash them thoroughly to release their juices. Continue cooking until the sugar completely dissolves and the mixture thickens slightly.
- Strain Syrup: Remove the pan from heat and allow to cool for a few minutes. Strain the mixture through a sieve or cheesecloth into a bowl, separating the syrup from the cherry solids. Set syrup aside.
- Whip Cream: In a mixing bowl, whip the heavy cream until it begins to thicken but is not fully stiffened.
- Mix Dip: Add the almond extract, room temperature mascarpone cheese, and powdered sugar to the whipped cream. Blend gently and thoroughly until a smooth, creamy dip forms, being careful not to overmix to avoid turning it into butter.
- Serve: Transfer the dip to a serving dish or platter. Drizzle the cherry syrup over the dip just before serving. Serve with fruits, cookies, crackers, or as a topping on ice cream.
Notes
- Use mascarpone at room temperature for smooth mixing.
- Do not overmix the dip to prevent it from turning buttery.
- This dip pairs well with fresh fruit, graham crackers, or waffle cookies.
- The cherry syrup can be stored separately and refrigerated for up to 3 days.
- For a non-alcoholic version, ensure all ingredients are free from alcohol-based extracts.
