Phyllo Dough
- 8 oz phyllo dough (thawed, use half of one stack and save the other half for later use)

Instructions
- Prepare the Oven: Preheat your oven to 400°F (204°C) to ensure it is hot and ready for baking the phyllo bites.
- Prepare the Phyllo: Unroll the 8 oz package of phyllo dough. Carefully remove about 10 sheets for this recipe. Immediately wrap the remaining sheets tightly in plastic wrap to prevent them from drying out.
- Assemble the Rolls: Lay the phyllo sheets flat on a clean surface. Brush melted butter generously between every 2-3 layers, using about 3 tablespoons total. Evenly spread the freshly grated gruyere cheese on the top sheet. Then, roll the layered sheets tightly lengthwise into a long cylinder.
- Cut and Arrange: Brush each cup of a 12-cup muffin tin with melted butter to prevent sticking. Use a sharp knife to slice the rolled phyllo cylinder into 12 even rounds. Place each round into a buttered muffin tin cup.
- Bake the Bites: Brush the top of each phyllo bite with about ½ tablespoon of melted butter. Bake the bites in the preheated oven for 20-25 minutes, or until they are golden brown and crispy. Begin checking for doneness at the 15-minute mark to avoid burning.
- Finish and Serve: Remove the phyllo bites from the oven and allow them to cool slightly. While still warm, drizzle each bite with ½ to 1 tablespoon of honey. Garnish with chopped chives and toasted almonds before serving for a burst of flavor and texture.

- Keep unused phyllo dough covered tightly with plastic wrap to prevent it from drying out.
