Description
This Cheeseburger Quesadilla recipe combines the savory flavors of a classic cheeseburger with the crispy, cheesy goodness of a quesadilla. Ground beef seasoned with classic burger spices is layered with cheddar cheese, onions, and pickles inside a flour tortilla, then grilled to golden perfection. A homemade burger sauce adds a tangy, creamy element that ties everything together for a delicious twist on two favorites.
Ingredients
Scale
Burger Sauce
- 1/2 cup mayonnaise
- 2 Tablespoons grated onion
- 2 Tablespoons ketchup
- 1 Tablespoon pickle relish
- 2 teaspoons yellow mustard
- 1 teaspoon white vinegar
- 1/4 teaspoon paprika
Quesadilla Filling
- 1 pound lean ground beef
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon Worcestershire sauce
- 4 burrito-sized flour tortillas
- 16 thinly sliced cheddar cheese slices
- 1/2 cup chopped onion
- 1/2 cup pickles, chopped
- 1 Tablespoon olive oil
Instructions
- Prepare the burger sauce: In a bowl, whisk together the mayonnaise, grated onion, ketchup, pickle relish, yellow mustard, white vinegar, and paprika until smooth. Cover and refrigerate until ready to use.
- Cook the ground beef: Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it into small pieces, until browned and cooked through. Drain excess grease.
- Season the beef: Stir in salt, black pepper, garlic powder, and Worcestershire sauce until well combined. Remove from heat.
- Assemble the quesadillas: Lay out the flour tortillas. On half of each tortilla, arrange 2 slices of cheddar cheese, then evenly divide the cooked beef, followed by chopped onions and pickles. Top with 2 more slices of cheddar cheese, then fold the tortilla over to close.
- Cook the quesadillas: Heat a griddle or large skillet over medium-high heat and add the olive oil. Once hot, place the quesadillas and cook for 2-3 minutes per side, until tortillas are golden brown and cheese is melted.
- Serve: Remove from pan, slice into triangles, and serve warm with the prepared burger sauce on the side.
Notes
- You can adjust the amount of pickles and onions to your taste.
- For extra crispiness, cook the quesadillas on slightly lower heat for a longer time.
- Use lean ground beef to reduce grease and keep the quesadilla from becoming soggy.
- Store leftover burger sauce in the refrigerator for up to 3 days.
- To make it gluten-free, substitute flour tortillas with gluten-free tortillas.
