Instructions

  1. Mix Cheeses: In a medium mixing bowl, combine the drained ricotta cheese and mascarpone cheese. Using a hand mixer on medium-high speed, blend for several minutes until the mixture is smooth and creamy.
  2. Add Sweeteners and Flavor: Gradually add the sifted powdered sugar and vanilla extract to the cheese mixture. Beat on low speed initially to prevent powdered sugar from flying, then increase speed until well combined and smooth.
  3. Fold in Chocolate Chips: Gently fold in all but two tablespoons of the mini semi-sweet chocolate chips into the creamy mixture. Cover the bowl and refrigerate for at least 1 hour to allow flavors to meld. The dip can be served after 15 minutes if necessary but is best chilled longer.
  4. Serve: Just before serving, sprinkle the reserved two tablespoons of chocolate chips on top and dust with additional powdered sugar if desired. Serve the dip with a variety of dippers such as pizzelle cookies, graham crackers, chocolate chip cookies, broken waffle cones, strawberries, or broken cannoli shells for dipping and enjoy!
