Crab Mixture

  • 8 oz. lump crabmeat
  • 1/2 cup mayonnaise
  • 2 tsp. Sriracha
  • 3 green onions, thinly sliced (plus more for garnish)

Garnish & Serving

  • Sesame seeds, for garnish
  • Soy sauce, for serving

Instructions

  1. Prepare the Avocado Base: In a medium bowl, squeeze the juice of one lemon over the avocado. Season with kosher salt and ground pepper to taste. Mash or gently mix to combine the flavors. Using a fork, top each cucumber slice with a portion of the avocado mixture, creating a creamy base on each slice.
  2. Mix the Crab Topping: In another medium bowl, combine the lump crabmeat with mayonnaise, Sriracha, and thinly sliced green onions. Season with salt and pepper according to your preference. Stir gently with a fork to evenly incorporate all ingredients while maintaining some texture.
  3. Assemble the Sushi Bites: Place a small scoop of the crab mixture on top of each avocado-topped cucumber slice. Sprinkle each bite generously with sesame seeds and additional sliced green onions if desired. Serve immediately with soy sauce for dipping to enhance the flavors.
