Cake Batter Protein Balls:
- 1 cup cashew butter
- 2 tablespoons maple syrup or honey
- 1/3 cup vanilla protein powder
- 1/3 cup oat flour
- 1 teaspoon vanilla extract
- 1/4 teaspoon almond extract (optional, but adds a cakey flavor)
- 3 tablespoons sprinkles (plus more for rolling)
- Pinch of salt
Instructions
- Mix cashew butter: Add the cashew butter, vanilla, almond extract, and maple syrup to a bowl. Mix well.
- Add all ingredients: Add all remaining ingredients except the sprinkles and combine until a dough forms. I like to use a rubber spatula for easiest mixing.
- Add sprinkles: Fold in the sprinkles.
- Scoop: Scoop the dough and roll into roughly 1 to 1 1/2 inch balls. About 1 tbsp of dough.
- Roll in sprinkles: Roll the dough in additional sprinkles if desired.
- Store: Store in the fridge for up to 2 weeks.
