For Toasted Pecans:

  • 1 and 1/2 cups (195g) chopped pecans

For Cookie Dough:

  • 1 cup (16 Tbsp; 226g) unsalted butter, softened
  • 1/2 cup (100g) granulated sugar
  • 1 cup (200g) packed dark or light brown sugar
  • 2 large eggs, at room temperature
  • 2 teaspoons pure vanilla extract
  • 2 and 1/2 cups (313g) all-purpose flour (spooned & leveled)
  • 1 teaspoon cornstarch
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/3 cup (67g) granulated sugar, for rolling
  • Sea salt, for sprinkling

Instructions

  1. To Toast Pecans: Preheat oven to 300°F (149°C). Toast chopped pecans on a lined baking sheet for 15 minutes, stirring twice. Set aside.
  2. Prepare Cookie Dough: Beat butter, sugars, eggs, and vanilla until creamy. Mix in dry ingredients. Add toasted pecans, chill dough for at least 3 hours.
  3. Shape and Bake: Preheat oven to 350°F (177°C). Roll dough into balls, coat with sugar if desired. Bake for 11-12 minutes. Sprinkle with sea salt, if desired. Cool on a wire rack.
