Chicken:

  • 2 lbs boneless chicken breasts, cut into cubes

Sweet Potatoes:

  • 5 medium sweet potatoes, cut into small cubes

Broccoli:

  • 2 heads broccoli, cut into small florets

Buffalo Sauce Mixture:

  • 1 cup buffalo sauce
  • 1/2 cup avocado oil or olive oil
  • 1/2 tsp salt
  • 1 tsp pepper
  • 2 tsp garlic powder

Additional Toppings:

  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped green onion
  • 1/2 cup cooked turkey bacon

Optional:

  • Drizzle of ranch dressing

Instructions

  1. Preheat oven: Preheat oven to 425F and grease a 9×13 casserole dish.
  2. Prepare ingredients: Cut chicken, sweet potatoes, and broccoli into smaller pieces.
  3. Mix buffalo sauce: In a small bowl, combine buffalo sauce, oil, salt, pepper, and garlic.
  4. Coat sweet potatoes: Toss sweet potatoes with half of the buffalo sauce mixture in a large bowl.
  5. Roast sweet potatoes: Spread sweet potatoes in the casserole dish and roast for 30 minutes, flipping halfway through.
  6. Coat chicken and broccoli: Add chicken and broccoli to the bowl with remaining buffalo sauce and toss to coat.
  7. Combine ingredients: Add chicken and broccoli on top of roasted sweet potatoes after 30 minutes.
  8. Bake: Bake for 20-25 minutes until chicken reaches 165F internal temperature.
  9. Add toppings: Top with cheese, green onion, and cooked bacon and bake for an additional 5 minutes until cheese melts.
  10. Serve: Let cool slightly before serving, and add ranch or other desired toppings.
