- 2 lbs boneless chicken breasts, cut into cubes
Sweet Potatoes:
- 5 medium sweet potatoes, cut into small cubes
Broccoli:
- 2 heads broccoli, cut into small florets
Buffalo Sauce Mixture:
- 1 cup buffalo sauce
- 1/2 cup avocado oil or olive oil
- 1/2 tsp salt
- 1 tsp pepper
- 2 tsp garlic powder
Additional Toppings:
- 1 cup shredded cheddar cheese
- 1/4 cup chopped green onion
- 1/2 cup cooked turkey bacon
Optional:
- Drizzle of ranch dressing
Instructions
- Preheat oven: Preheat oven to 425F and grease a 9×13 casserole dish.
- Prepare ingredients: Cut chicken, sweet potatoes, and broccoli into smaller pieces.
- Mix buffalo sauce: In a small bowl, combine buffalo sauce, oil, salt, pepper, and garlic.
- Coat sweet potatoes: Toss sweet potatoes with half of the buffalo sauce mixture in a large bowl.
- Roast sweet potatoes: Spread sweet potatoes in the casserole dish and roast for 30 minutes, flipping halfway through.
- Coat chicken and broccoli: Add chicken and broccoli to the bowl with remaining buffalo sauce and toss to coat.
- Combine ingredients: Add chicken and broccoli on top of roasted sweet potatoes after 30 minutes.
- Bake: Bake for 20-25 minutes until chicken reaches 165F internal temperature.
- Add toppings: Top with cheese, green onion, and cooked bacon and bake for an additional 5 minutes until cheese melts.
- Serve: Let cool slightly before serving, and add ranch or other desired toppings.
