Broccoli Fritters

Instructions

  1. Steam the Broccoli: Place the finely diced broccoli and water into a large bowl. Cover tightly with plastic wrap and microwave for 3-4 minutes until the broccoli becomes very soft. Alternatively, you can steam the broccoli on the stovetop. Once softened, carefully drain any remaining water.
  2. Mash Gently: Using a large fork or potato masher, partially mash the steamed broccoli to break it down while maintaining some texture for a pleasant mouthfeel.
  3. Mix Your Fritter Batter: Add shredded cheddar cheese, grated Parmesan, almond flour, eggs, minced garlic, sea salt, and black pepper to the mashed broccoli. Stir thoroughly until all ingredients are evenly combined forming a cohesive batter.
  4. Pan-Fry to Perfection: Heat the olive oil in a large skillet over medium heat. Scoop approximately 1/4 cup of the batter for each fritter onto the skillet. Gently flatten each scoop to about 1/4 to 1/3 inch thickness using a spatula.
  5. Achieve Golden Crispiness: Cook the fritters for 2-3 minutes on each side, turning carefully until they are golden brown and cooked through completely.
