Instructions

  1. Cook Bacon: Place bacon strips in a large skillet over medium heat. Cook for 10-12 minutes, stirring frequently, until the bacon is browned and crispy. Remove the bacon from the pan, drain the grease, and cut into small pieces. Set aside.
  2. Prepare Hash Browns: In the same or a clean large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes or frozen hash browns. Cook for about 10 minutes, stirring frequently, until the potatoes are crispy and golden brown. Drain excess oil and set aside.
  3. Prep Toppings: While the bacon and hash browns cook, prepare your toppings by shredding the cheddar cheese, slicing the jalapeno and avocado, and setting out salsa and sour cream.
  4. Beat Eggs: Crack the eggs into a large bowl and beat them thoroughly until the mixture is smooth and uniform in color.
