Blueberry Mixture

  • 2 cups blueberries
  • 5 tablespoons water
  • ¼ cup + 2 tablespoons sugar

Yogurt Mixture

  • 2 cups Greek yogurt
  • ¼ cup honey
  • 1 lemon (zested and juiced)
  • 2 tablespoons water

Instructions

  1. Cook Blueberries: In a small saucepan, combine the blueberries, 5 tablespoons of water, and the sugar. Heat over medium heat for 3-5 minutes until the berries burst and sugar dissolves, forming a saucy mixture.
  2. Cool Blueberries: Remove from heat and allow the blueberry mixture to cool to room temperature.
  3. Prepare Yogurt Mixture: In a medium bowl, combine Greek yogurt, honey, lemon zest, lemon juice, and the remaining 2 tablespoons of water. Mix well until fully incorporated.
  4. Assemble Popsicles: Alternate spooning layers of the yogurt mixture and blueberry mixture into popsicle molds. Use a chopstick to swirl the layers inside each mold for a marbled effect.
  5. Freeze: Insert popsicle sticks according to manufacturer’s instructions and freeze for 4 to 8 hours until fully solid.
  6. Remove Popsicles: To unmold, fill a vessel larger than the molds with warm water so it reaches about halfway up the molds. Dip the molds in the water for 10-20 seconds, then gently pull out the popsicles.
  7. Storage: Wrap each popsicle individually in cellophane or parchment paper and keep frozen to store for later enjoyment.
