For the Sausage Gravy:
- 1 pound ground pork sausage
- 4 ½ cups milk
- 3 Tablespoons butter
- ½ cup flour
- ¾ teaspoon salt

For the Biscuits:
- 2 7.5 ounce cans refrigerator biscuits or homemade drop biscuit dough
Instructions
- Preheat Oven and Prep Pan: Heat oven to 350 degrees. Spray a 13 x 9 inch glass pan with oil cooking spray.
- Brown Sausage: In a medium-sized pot, brown the sausage. Transfer the cooked sausage to the prepared baking dish and blot out excess grease.
- Make Roux: In the same pot, add butter to the sausage drippings and melt over medium heat. Add flour, salt, and peppers. Stir to create a roux and cook until it begins to brown, about 2-3 minutes.
- Prepare Gravy: Gradually add milk to the roux, whisking until smooth. Cook on medium-low heat, stirring often, until thickened, for several minutes. Pour the gravy over the sausage in the baking pan.
- Prepare Biscuits: Cut the refrigerator biscuits into fourths or prepare homemade biscuit dough. Place the biscuit pieces on top of the gravy in the baking dish.
- Bake: Bake for 25-30 minutes or until the biscuits are golden brown.
