Instructions

  1. Prepare the Special Sauce: In a small bowl, combine mayonnaise, ketchup, dill pickle juice, yellow mustard, and sweet pickle relish. Season with salt and black pepper to taste. Optionally, add garlic powder and onion powder for extra flavor. Set aside to let flavors meld.
  2. Portion and Shape the Beef: Divide the ground beef into 8 equal portions, about 2 oz each. Using your fingers, gently press and flatten each portion onto the center of a flour tortilla until fully smashed and thin. Season the beef side with salt and black pepper.
  3. Cook the Taco Burgers: Heat a large skillet or griddle over medium-high heat. Place the tacos beef-side down on the hot surface. Depending on your pan size, cook several tacos at once. Press down firmly on the tortilla side using another pan, skillet, burger press, or heavy object. Cook for 2-3 minutes until the beef is nicely browned.
  4. Flip and Melt Cheese: Carefully flip the tacos and immediately place a slice of cheese on top of each beef patty. Continue cooking for another 1-2 minutes to allow the cheese to melt. Then remove tacos from heat.
