  • 1 small avocado, thinly sliced
  • 4 sticks imitation crab meat, sliced in half lengthwise

Instructions

  1. Prepare the rice: Wash the sushi rice several times in a large bowl with cold water until the water runs almost clear to remove excess starch. Drain the rice thoroughly to ensure the correct texture.
  2. Make the vinegar seasoning: In a small bowl, whisk together rice vinegar, granulated sugar, and kosher salt until the sugar dissolves completely. Set aside this seasoning mixture to be added to the rice later.
  3. Cook the rice: In a medium saucepan over medium-high heat, combine the washed rice and 1 cup water. Cover and bring to a boil. Reduce heat to low and simmer, covered, for about 30 minutes or until water is fully absorbed. Remove from heat and let it stand, covered, for 10 minutes to steam and finish cooking.
  4. Season the rice: Transfer the cooked rice to a large, non-metallic, flat-bottomed bowl. Using a plastic spatula, gently slice through the rice at a sharp angle to break up lumps and separate the grains. Gradually pour the vinegar seasoning mixture over the rice while mixing carefully to evenly season it. Cover the rice with a damp cloth until ready to use to maintain moisture.
  5. Prepare the nori and rice layer: Place one sheet of nori shiny side down on a clean, dry cutting board. Dip one hand into a bowl of water, shake off excess water, then pick up about one-fourth of the rice. Spread the rice evenly over the center of the nori, leaving about a 1-inch strip at the top uncovered to seal the roll.
  6. Flip the nori and add fillings: Place a bamboo sushi mat over the rice-covered nori, then carefully flip them so the nori side faces you. Arrange one-fourth of the cucumber strips, avocado slices, and crab meat in a horizontal row across the center of the nori, ensuring the filling reaches both ends lengthwise.
  7. Roll the sushi: Starting with the edge closest to you, lift the bamboo mat with your thumbs and index fingers, using your other fingers to hold the fillings in place. Roll the mat forward and away from you, pressing gently but firmly to form a tight roll.
  8. Repeat and finish: Quickly repeat the rolling process to make a total of four rolls. Once rolled, sprinkle each roll with toasted sesame seeds, then slice each roll into 8 pieces using a sharp knife. Serve immediately with soy sauce for dipping.
