  • ½ yellow onion, minced
  • 2 cloves garlic, minced
  • 1 can (4 ounces) diced green chiles
  • 2 tablespoons taco seasoning

Taquitos

  • 16 corn tortillas (6 inch)
  • Shredded Mexican blend cheese (about 1½ cups)
  • Olive oil, for brushing

Instructions

  1. Cook the beef and onions: In a large skillet over medium-high heat, cook the ground beef along with the minced yellow onion until the beef is browned and nearly cooked through, stirring occasionally to break up the meat.
  2. Sauté the garlic, chiles, and seasonings: Add minced garlic, diced green chiles, and taco seasoning to the skillet. Continue cooking and stirring until the beef is fully cooked, the ingredients are well combined, and fragrant. Remove the skillet from heat and set aside.
  3. Preheat oven and prepare tortillas: Preheat your oven to 350°F (175°C). Line a baking sheet with foil and brush it lightly with olive oil. Place a batch of corn tortillas on the baking sheet in a single layer, brush the tops with olive oil, and bake for 3-4 minutes to soften them for rolling.
  4. Repeat baking tortillas in batches: Remove the tortillas from the oven and repeat the softening process with the remaining tortillas until all are prepared for assembly.
  5. Assemble the taquitos: On each softened tortilla, place about two tablespoons of the beef filling near the lower third. Sprinkle some shredded Mexican blend cheese on top. Then, tightly roll the tortilla around the filling and place it seam side down on the baking sheet. Continue assembling all taquitos this way.
  6. Bake the taquitos: Bake the assembled taquitos in the oven for 15 minutes. Remove them carefully, turn each taquito over to ensure even crisping, then bake for an additional 10 minutes or until golden and crispy.
  7. Serve: Serve your beef taquitos hot with fresh cilantro, sour cream, salsa, or your favorite dipping sauce to enjoy a delicious and crunchy treat.
