Delight in these moist and flavorful Banana Blondies with a rich brown butter icing. Made with mashed bananas, muscovado sugar, and dark chocolate chips, these blondies are baked to perfection and topped with a luscious, nutty brown butter frosting that adds a gourmet touch to this classic treat.

Ingredients

Scale

Blondies

  • 1/2 cup Butter, melted (salted butter recommended)
  • 3/4 cup Muscovado sugar
  • 1 Egg
  • 1.5 tsp Vanilla extract
  • 1.5 cups All-purpose flour
  • 1.5 tsp Baking powder
  • 2 Bananas, mashed
  • 1/2 cup Mini dark chocolate chips

Brown Butter Icing

  • 4 tbsp Butter
  • 2/3 cup Icing sugar
  • 23 tbsp Milk, lukewarm
  • 1/2 tsp Vanilla bean paste or Vanilla extract
  • Optional: chocolate-coated caramel balls for garnish

Instructions

  1. Preheat Oven: Preheat your oven to 180°C (350°F). Line an 8-inch square baking pan with parchment paper or grease it well to prevent sticking.
  2. Mix Butter and Sugar: In a large bowl, combine the melted butter and muscovado sugar, stirring until well blended.
  3. Add Egg and Vanilla: Incorporate the egg and vanilla extract into the butter and sugar mixture, mixing thoroughly for uniform consistency.
  4. Combine Dry Ingredients and Bananas: Whisk in the all-purpose flour and baking powder, then fold in the mashed bananas. Mix until just combined without overmixing to keep the batter tender.
  5. Fold in Chocolate Chips: Gently fold the mini dark chocolate chips into the batter, ensuring even distribution throughout.
  6. Transfer and Bake: Pour the thick batter into the prepared pan and bake in the preheated oven at 180°C for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool Blondies: Allow the blondies to cool in the pan for 5 to 10 minutes, then transfer them to a cooling rack to cool completely before icing.
  8. Prepare Brown Butter Icing: In a small saucepan set over low heat, melt the butter. Continue cooking until it bubbles, foams, and turns a golden brown color, releasing a nutty aroma. Remove from heat and optionally strain to remove milk solids.
  9. Mix Icing Ingredients: Whisk the brown butter with icing sugar and vanilla bean paste (or extract). Gradually add lukewarm milk, one tablespoon at a time, until a smooth and viscous icing consistency is achieved.
  10. Ice the Blondies: Pour and evenly spread the brown butter icing over the cooled blondies. Optionally, sprinkle chocolate-coated caramel balls on top for added texture and flavor.
  11. Serve: Slice into squares and serve. Enjoy the rich, banana-infused blondies with their decadent brown butter frosting.

Notes

  • Muscovado sugar adds a rich molasses flavor; you can substitute with light brown sugar if unavailable.
  • Ensure bananas are ripe and well mashed for optimal sweetness and moisture.
  • Use lukewarm milk to help the icing blend smoothly without clumping.
  • If you prefer a dairy-free version, substitute butter with vegan butter and milk with a non-dairy alternative.
  • Chocolate-coated caramel balls are optional but add an extra crunch and flavor dimension.
  • Allow blondies to cool completely before icing to prevent the frosting from melting.
