Brown Butter Glaze

Banana Donuts

  • 2 overripe bananas (about 200g)
  • 1/4 cup oil
  • 1 egg (at room temperature)
  • 1 tsp vanilla extract
  • 1/3 cup brown sugar
  • 1 cup flour
  • 1/2 tsp cinnamon
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Instructions

  1. Make the brown butter: Melt the butter in a medium saucepan over medium-low heat for about 7-8 minutes. Watch carefully to prevent burning. You’ll know it’s ready when it forms a thick foam and gives off a nutty aroma.
  2. Combine brown butter gluten: Pour the browned butter into a bowl, add powdered sugar, and stir until combined. Place the mixture in the refrigerator to solidify while preparing the donuts.
  3. Preheat and prepare pan: Preheat your oven to 350°F (175°C). Spray a donut pan with cooking spray and set aside.
  4. Mix wet ingredients for donuts: In a large bowl, mash the bananas and mix with oil, egg, vanilla extract, and brown sugar until well combined.
  5. Add dry ingredients: Gently fold in flour, cinnamon, baking powder, baking soda, and salt. Be careful not to overmix to keep the donuts tender.
  6. Fill donut pan and bake: Divide the batter evenly into the six donut cavities. Bake for 17-19 minutes, or until a toothpick inserted in the center comes out clean.
