  • 8 ounces cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 6 slices bacon, cooked and crumbled
  • 45 fresh jalapeños, finely chopped (seeds removed)

Assembly:

  • 15 eggroll wrappers
  • Vegetable oil for frying

Instructions

  1. Cream Cheese Filling: In a mixing bowl, combine softened cream cheese and shredded cheddar. Stir in crumbled bacon and chopped jalapeños. Season with salt and pepper.
  2. Assembly: Lay an eggroll wrapper on a clean surface. Spoon about 2 tablespoons of filling onto the center. Moisten edges with water, fold bottom corner over filling, fold in sides, and roll up tightly.
  3. Frying: Heat vegetable oil in a skillet over medium-high heat until it reaches 350°F (175°C). Fry the eggrolls in batches for 2-3 minutes on each side until golden brown and crispy.
