Cream Cheese Filling:
- 8 ounces cream cheese, softened
- 1 cup shredded cheddar cheese
- 6 slices bacon, cooked and crumbled
- 4–5 fresh jalapeños, finely chopped (seeds removed)
Assembly:
- 15 eggroll wrappers
- Vegetable oil for frying
Instructions
- Cream Cheese Filling: In a mixing bowl, combine softened cream cheese and shredded cheddar. Stir in crumbled bacon and chopped jalapeños. Season with salt and pepper.
- Assembly: Lay an eggroll wrapper on a clean surface. Spoon about 2 tablespoons of filling onto the center. Moisten edges with water, fold bottom corner over filling, fold in sides, and roll up tightly.
- Frying: Heat vegetable oil in a skillet over medium-high heat until it reaches 350°F (175°C). Fry the eggrolls in batches for 2-3 minutes on each side until golden brown and crispy.
- Serving: Drain excess oil on paper towels before serving.
