Salmon and Marinade

  • 2 x 180g / 6oz salmon fillets, skinless
  • 1 tsp fresh ginger, finely grated
  • 1 garlic clove, crushed
  • 1 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 2 tbsp sweet chili sauce

Additional Ingredients

  • Oil spray (olive oil, canola oil, etc.)
  • Sesame seeds, for garnish
  • Scallions or shallots, finely sliced, for garnish
  • Steamed Asian greens, to serve
  • Rice, to serve

Instructions

  1. Marinate Salmon: Combine soy sauce, oyster sauce, sweet chili sauce, grated ginger, and crushed garlic in a shallow bowl to make the marinade. Add the salmon fillets and turn to coat them completely. Cover the bowl and refrigerate for at least 30 minutes or up to overnight to allow flavors to penetrate the fish.
  2. Preheat Grill or Broiler: Set the grill or broiler on high heat and position the rack about 25 cm (10 inches) from the heat source to ensure even cooking and caramelization.
  3. Apply Glaze: Remove salmon from marinade and place on a baking tray without any oil or parchment paper as it may burn. Dab some of the marinade glaze on top of the fillets carefully, avoiding excess liquid pooling around the salmon to prevent burning.
  4. Grill the Salmon: Cook the salmon under the broiler or grill for 7 minutes. Then, remove it and generously spray the surface with oil. Return to the grill/broiler for an additional 1 to 3 minutes until the surface caramelizes and the salmon is cooked through; the flesh should easily flake. Aim for an internal temperature of about 50°C (122°F) for medium rare. Avoid overcooking to maintain moisture and flavor.
  5. Serve: Plate the salmon fillets and sprinkle with sesame seeds and finely sliced scallions or shallots. Serve alongside steamed Asian greens and cooked rice for a complete meal.
