  • 8 medium California apples – cored & diced into 1/2″ cubes (about 8 cups chopped)
  • 1/4 cup unsalted butter
  • 1 tablespoon lemon juice
  • 2/3 cup brown sugar
  • 1/2 teaspoon fine sea salt
  • 2 tablespoons all purpose flour

Cheddar Drop Biscuits

  • 2 1/4 cups all purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon fine sea salt
  • 1/2 cup unsalted butter, cold and cut into 1/4” cubes
  • 1 cup shredded sharp cheddar cheese, divided (3/4 cup and 1/4 cup)
  • 3/4 cup buttermilk, cold
  • 2 tablespoons granulated sugar

Instructions

  1. Prepare the Apple Filling: In a medium pot, melt 1/4 cup unsalted butter over medium heat. Add the diced apples and toss to coat evenly with the butter. Stir in the lemon juice, brown sugar, and fine sea salt. Continue cooking over medium-low heat, stirring occasionally, until the sugar dissolves and the apples begin to soften, about 5 minutes. Remove the pot from heat and stir in 2 tablespoons all-purpose flour until the mixture thickens slightly.
  2. Preheat Oven and Prepare Baking Dish: Preheat your oven to 400°F (204°C). Lightly grease a well-seasoned 9-inch cast iron skillet or a glass or ceramic baking dish with the remaining 1 tablespoon of unsalted butter. Transfer the prepared apple filling into the greased pan, spreading it evenly.
  3. Make the Cheddar Drop Biscuit Dough: In a medium bowl, whisk together 2 1/4 cups all-purpose flour, baking powder, salt, and granulated sugar until well combined. Add the cold, cubed butter and toss it in the flour mixture to coat. Using a pastry cutter, fork, or your hands, cut the butter into the flour until the mixture resembles coarse meal with small pea-sized granules. Add 3/4 cup shredded sharp cheddar cheese and cut it into the dough with a pastry blender or fork until just combined, leaving visible cheese shreds and a shaggy texture.
