  • 1 cup fresh spinach, loosely packed and chopped into 1 inch pieces
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon ground cumin
  • 2 cups grated cheese (Mexican blend, Monterey Jack, or Cheddar)

  • 1 package egg roll wrappers

Instructions

  1. Prepare the filling: In a large mixing bowl, combine the diced chicken, corn, black beans, bell pepper, green onions, and spinach, ensuring all ingredients are evenly distributed.
  2. Add cheese and seasonings: Stir in the grated cheese, chili powder, garlic powder, salt, and ground cumin. Mix everything thoroughly to blend flavors well.
  3. Prepare wrappers: Fill a small bowl with water to help seal the egg rolls. Lay an egg roll wrapper flat on a cutting board, ready for filling.
  4. Fill wrappers: Scoop approximately 1/3 cup of the chicken filling into the bottom corner of the egg roll wrapper for a neat and manageable roll.
  5. Roll egg rolls: Fold up the bottom corner of the wrapper first, then fold in the two sides so the edges almost meet. Brush water along the exposed edges with your fingers to help seal the wrapper, then tightly roll up the egg roll and place it on a waxed or parchment-lined sheet pan. Repeat with remaining filling and wrappers.
  6. Oil the egg rolls: Lightly brush each egg roll with olive oil or use a spray bottle to spritz oil on all sides to ensure even crisping in the air fryer.
  7. Air fry first side: Place egg rolls in the air fryer basket spaced evenly so they do not touch. Cook at 380°F for 5 minutes until the bottom side begins to crisp.
  8. Flip and cook other side: Using tongs, carefully flip the egg rolls, brush or spray more oil on the exposed side, then continue cooking for an additional 3-5 minutes until the egg rolls are golden brown and crispy all over.
  9. Serve: Remove the crispy air-fried egg rolls and serve immediately with your favorite dipping sauces such as salsa, sour cream, or guacamole.

Notes

  • For a vegetarian option, omit the chicken and add extra beans or diced vegetables.
  • Make sure not to overfill the wrappers to prevent them from bursting during cooking.
  • If you don’t have an air fryer, these egg rolls can be baked in a conventional oven at 425°F for 15-20 minutes, flipping halfway.
