For the Toast
- 2 thin slices whole wheat bread
For the Avocado Smash

- 4 tsp lukewarm water
- 2 large eggs

- 1/2 cup cherry or grape tomatoes, halved

Instructions
- Toast the Bread: Working in batches if necessary, place the bread slices in a single layer inside the air fryer basket. Set the air fryer to 350°F and cook, flipping the bread halfway through, until the slices are light golden and crisp, about 3 to 4 minutes. Once done, transfer the toast to plates for assembling later.
- Prepare the Avocado Smash: Scoop the flesh of the avocado into a medium bowl. Add the fresh lemon juice, chopped basil leaves, and a pinch of kosher salt. Use a fork to mash the avocado until it is combined but still chunky. Adjust seasoning with additional salt as desired.
- Prepare for Poaching Eggs: Lightly coat two 4-ounce ramekins with olive oil cooking spray to prevent sticking. Fill each ramekin with 2 teaspoons of lukewarm water, then carefully crack one egg into each ramekin.
- Air Fry the Poached Eggs: Place the ramekins into the air fryer basket. Set the air fryer to 350°F and cook until the egg whites are fully set but the yolks remain runny, approximately 6 to 8 minutes.
- Assemble the Toasts: Spread the avocado mixture evenly over the toasted bread slices. Carefully remove the hot ramekins from the air fryer one at a time. Run a spatula around the edges of each egg, then slide the eggs onto the avocado-covered toast, flipping each egg so that the bottom of the egg ramekin side is face up on the plate.
