A close-up of a dessert held by a woman's hand with red painted nails against a white marbled background, showing three visible layers: the bottom layer is a light golden crunchy biscuit, the middle layer is smooth and thick dark chocolate, and the top layer is fluffy white marshmallow. The layers are stacked evenly, with a slightly crumbly texture on the biscuit and a creamy finish on the marshmallow, capturing the rich contrast between each part. photo taken with an iphone --ar 4:5 --v 7

Ingredients

  • 1/2 cup Butter (softened, salted or unsalted)
  • 1/3 cup Brown sugar
  • 1/4 cup Granulated sugar
  • 1 Egg
  • 1 tsp Vanilla extract
  • 1 1/2 cup All-purpose flour
  • 1/2 cup Graham crackers (finely crushed, about 3.5 sheets, for the cookie dough)
  • 1/4 tsp Salt
  • 3/4 tsp Baking soda
  • 5 standard Hershey bars
  • 1 1/2 cup Marshmallow fluff

Instructions

  1. Step 1: Preheat the oven to 350°F then line an 8×8 inch baking pan with parchment paper and set it aside.
  2. Step 2: Cream the butter, granulated sugar, and brown sugar together until combined. Add in the egg and vanilla extract and mix again until smooth.
  3. Step 3: Stir in the flour, crushed graham crackers, salt, and baking soda. Mix just until the flour mixture disappears and the dough comes together.
  4. Step 4: Press half of the dough evenly onto the prepared baking pan. Carefully remove the parchment along with the dough, and place it in the freezer. Re-line the pan with fresh parchment paper and press the remaining cookie dough evenly onto it.
  5. Step 5: Arrange the Hershey bars over the dough in the pan, breaking pieces as needed to cover the entire surface. Spread the marshmallow fluff evenly on top of the chocolate layer.
  6. Step 6: Remove the chilled dough from the freezer and carefully flip it on top of the marshmallow fluff layer, working gently to keep it intact.
  7. Step 7: Bake the layered bars in the preheated oven for 25 minutes. Allow them to cool completely before slicing to reveal the gooey, layered interior.

Tips & Variations

  • Use salted or unsalted butter based on your preference; salted adds a nice balance to the sweetness.
  • For extra crunch, sprinkle some chopped nuts over the chocolate before adding the marshmallow fluff.
  • Substitute the Hershey bars with your favorite chocolate bars, like milk chocolate or dark chocolate, to customize the flavor.
  • Freezing the bottom cookie layer helps prevent the marshmallow fluff from mixing into the dough when flipping it over.

Storage

Store the s’mores cookie bars in an airtight container at room temperature for up to 3 days. For longer storage, keep them refrigerated for up to a week. Reheat gently in the microwave for a few seconds to soften the marshmallow before serving.

How to Serve

A group of s'mores bars cut into squares are placed on brown parchment paper. Each bar has three layers: a top light golden brown baked crust layer with a cracked texture, a white marshmallow middle layer, and a bottom graham cracker layer. Around the bars, there are full and broken white graham crackers, small squares of dark milk chocolate, and two toasted marshmallows with dark brown char marks. The background is a white marbled texture. photo taken with an iphone --ar 4:5 --v 7

FAQs

Can I use regular marshmallows instead of marshmallow fluff?

Regular marshmallows won’t spread as easily as marshmallow fluff, but you can melt them slightly before spreading to mimic the fluff’s consistency.

Do I have to chill the cookie dough before assembling?

Chilling the dough, especially the bottom layer, helps it hold together when flipping and baking. It also prevents the marshmallow layer from mixing with the dough.

Ingredients

Scale

Cookie Dough

  • 1/2 cup Butter (softened, salted or unsalted)
  • 1/3 cup Brown sugar
  • 1/4 cup Granulated sugar
  • 1 Egg
  • 1 tsp Vanilla extract
  • 1 1/2 cups All-purpose flour
  • 1/2 cup Graham crackers (finely crushed, about 3.5 sheets)
  • 1/4 tsp Salt
  • 3/4 tsp Baking soda

Filling and Topping

  • 5 standard Hershey bars
  • 1 1/2 cups Marshmallow fluff

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper and set it aside to prepare your dough.
  2. Cream Butter and Sugars: In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until the mixture is smooth and well combined. Add in the egg and vanilla extract, then mix again until fully incorporated.
  3. Add Dry Ingredients: Gradually add the all-purpose flour, finely crushed graham cracker crumbs, salt, and baking soda to the wet mixture. Mix just until the flour disappears and everything is combined; avoid overmixing to keep the dough tender.
  4. Divide and Chill Dough Layers: Press half of the cookie dough evenly onto the prepared baking pan. Carefully remove the parchment paper with the dough layer and place it in the freezer. Re-line the baking pan with fresh parchment paper and evenly press the remaining cookie dough onto it.
  5. Assemble Bars: Lay pieces of Hershey chocolate bars evenly over the dough in the pan. Spread the marshmallow fluff generously on top of the chocolate layer. Gently take the chilled cookie dough layer from the freezer and flip it on top of the marshmallow fluff, making sure to keep it intact and evenly covering the top.
  6. Bake and Cool: Place the assembled bars in the preheated oven and bake for 25 minutes. After baking, allow the bars to cool completely before slicing to maintain the beautiful layered cross-section and ensure clean cuts.

Notes

  • Pressing and chilling the dough layers separately helps maintain distinct layers of cookie and marshmallow filling.
  • Use parchment paper to easily transfer and flip the dough layers without breaking.
  • Allow bars to cool fully before slicing to prevent the marshmallow from oozing and to maintain structure.
  • You can substitute milk chocolate Hershey bars with dark chocolate or other chocolate bars of choice for different flavor profiles.
