  • 1 1/4 cups chicken stock
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1 bay leaf
  • 2 cups peeled and chopped russet potatoes
  • 20 ounces mixed seafood (such as shrimp, scallops, fish, clams, or mussels)
  • 3 tablespoons fresh parsley, chopped (plus more for garnish)
  • Juice of 1/2 lemon

Instructions
