Introduction

These homemade gourmet crackers combine wholesome flours, nuts, seeds, and fragrant spices to create a crunchy, flavorful snack. Perfect for pairing with soft cheeses or enjoying on their own, they are easy to make and can be stored for weeks.

A stack of five thin, dark brown fruit and nut crispbread slices with visible seeds and dried fruit sits on white parchment paper over a white marbled texture. The top slice has a soft, glossy, pale yellow melted cheese spread over it, showing smooth texture with some darker mold spots peeking through. Ingredients

  • 1 cup / 250 ml milk (any fat % cow’s milk)
  • ¼ cup / 50g brown sugar, packed
  • ¼ cup plain unsweetened yoghurt (Greek recommended)
  • ½ cup / 75g plain flour (all purpose)
  • ½ cup / 75g whole wheat / wholemeal flour
  • ½ cup dried cranberries (or other dried fruit of choice)
  • 1 tsp baking soda / bi-carb (or 3 tsp baking powder)
  • ½ cup rolled oats (or 1/3 cup more nuts of choice)
  • ¼ cup sunflower seeds (or other seeds or nuts of choice)
  • ½ tsp ground turmeric (optional)
  • ½ tsp cinnamon
  • ¼ tsp nutmeg (or allspice or 1/8 tsp cloves)
  • ¼ tsp dried thyme
  • 1 tsp dried rosemary (or ½ tsp more thyme)
  • ¼ tsp salt
  • 1/8 tsp black pepper

Instructions

  1. Step 1: Preheat the oven to 180°C (350°F) for all oven types. Grease and line a small loaf tin (approx. 21 x 11 x 7 cm) with baking paper.
  2. Step 2: In a bowl, whisk together the milk, brown sugar, and yoghurt until combined.
  3. Step 3: In a separate bowl, mix plain flour, wholemeal flour, and dried cranberries. Use your fingers to break up any large cranberry pieces.
  4. Step 4: Add the oats, sunflower seeds, baking soda (or powder), spices, salt, pepper, and the milk mixture to the flour mixture. Stir until you achieve a thick batter similar to muffin batter.
  5. Step 5: Scrape the batter into the prepared loaf tin and smooth the surface. Bake for 25 minutes, or until a skewer inserted in the center comes out clean.
  6. Step 6: Remove from the oven and cool on a rack. Once cooled, wrap tightly in cling wrap and freeze for at least 2 hours or up to 3 months.
  7. Step 7: When ready to make crackers, unwrap the loaf and allow it to thaw partially for about 20 minutes until it’s no longer rock hard.
  8. Step 8: Preheat the oven to 120°C (250°F). Position one baking shelf in the middle and another beneath it.
  9. Step 9: Using a serrated bread knife, slice the loaf thinly into approximately 2mm (1/12 inch) thick pieces. Arrange the slices on two large baking trays close together as they will not expand.
  10. Step 10: Bake the slices for about 50 minutes until lightly browned, swapping the trays halfway through for even baking.
  11. Step 11: Let the crackers cool on the trays. They will harden as they cool, creating a crisp texture.
  12. Step 12: Store the crackers in an airtight container for up to 4 weeks. They pair wonderfully with creamy cheeses, especially brie, camembert, or soft blue cheeses.

Tips & Variations

  • Substitute dried cranberries with other dried fruits such as raisins or chopped apricots for different flavors.
  • Add your favorite seeds or nuts instead of sunflower seeds, like pumpkin seeds or chopped walnuts, for added texture.
  • Omit the turmeric if you prefer a more neutral spice profile.
  • For a gluten-free option, try replacing plain and wholemeal flours with a gluten-free flour blend.
  • Slicing with a serrated knife helps achieve thin even slices without crumbling the loaf.

Storage

Store the fully baked crackers in an airtight container at room temperature. They will stay fresh and crisp for up to 4 weeks. If frozen after the first bake and sliced later, thaw before baking into crackers. To re-crisp leftovers, warm them briefly in the oven at low heat.

How to Serve

The image shows a stack of thin brown slices of bread with visible seeds and dark dried fruit pieces, arranged vertically on a white marbled surface. One slice near the top has a light yellow spread topped with a small green herb, and a silver butter knife with the same spread is placed nearby. To the right, a white plate holds a round cheese wheel with a section cut out, exposing its soft, pale yellow inside, while next to it is another white bowl containing three small bright red stuffed peppers with some olive oil. At the top right, there is a small bunch of dark purple grapes. Photo taken with an iphone --ar 4:5 --v 7

FAQs

Can I use regular flour instead of whole wheat flour?

Yes, you can use all plain (all-purpose) flour if you prefer a lighter texture, although whole wheat adds a pleasant nuttiness and fiber.

How do I know when the crackers are fully baked?

The crackers should be lightly browned and snap cleanly when broken. Baking at a low temperature for the extended time ensures they dry out properly without burning.

Add-ins

  • ½ cup dried cranberries (or other dried fruit of choice)
  • ½ cup rolled oats (or 1/3 cup more nuts of choice)
  • ¼ cup sunflower seeds (or other seeds or nuts of choice)

Instructions

  1. Preheat and Prepare Tin: Preheat the oven to 180°C (350°F). Grease and line a small loaf tin approximately 21 x 11 x 7 cm (8.5 x 4.5 x 3 inches) with baking paper for easy removal.
  2. Mix Wet Ingredients: In a bowl, whisk together the milk, brown sugar, and plain unsweetened yoghurt until fully combined.
  3. Combine Dry Ingredients: In a separate bowl, mix the plain flour, wholemeal flour, and dried cranberries. Use your fingers to break up any large cranberry pieces if necessary.
  4. Add Spices, Seeds, and Leavening: To the dry ingredients, add baking soda, rolled oats, sunflower seeds, turmeric, cinnamon, nutmeg, dried thyme, dried rosemary, salt, and black pepper. Then pour in the wet milk mixture and stir until you have a thick batter, similar to muffin batter in consistency.
  5. Transfer to Tin and Bake: Scrape or pour the batter evenly into the prepared loaf tin. Bake at 180°C (350°F) for 25 minutes or until a skewer inserted in the center comes out clean.
  6. Cool and Freeze: Remove the loaf from the oven and cool on a wire rack. Once cooled, wrap the loaf tightly in cling wrap and freeze for at least 2 hours or up to 3 months.
  7. Prepare for Slicing: When ready to make crackers, unwrap the loaf and let it thaw partially for about 20 minutes so the outside is not rock hard but still firm.
  8. Preheat Low Oven: Preheat the oven to 120°C (250°F). Position one oven rack in the middle and another below it to accommodate two trays.
  9. Slice Thinly: Using a serrated bread knife, slice the loaf into crackers about 2 mm (1/12 inch) thick. Arrange the slices closely on two large baking trays; they will not expand or stick during baking.
  10. Bake Thin Slices: Bake the slices at 120°C (250°F) for 50 minutes or until they turn a light brown. Rotate and swap the trays halfway through baking to ensure even cooking.
  11. Cool to Harden: Leave the crackers on the baking trays after removing them from the oven to cool completely. They will harden as they cool, forming the crispy texture that snaps when broken.
  12. Store and Serve: Store the cooled crackers in an airtight container for up to 4 weeks. These gourmet crackers are excellent served with creamy cheeses such as brie, camembert, or soft blue cheeses.
