Ingredients

Scale

Bean Layer

  • 16 oz. refried beans (1 can)
  • 1 oz. taco seasoning (1 packet)
  • 24 tbsp heavy cream
  • ¼ cup Fiesta blend shredded cheese (from 8 oz. bag)

Cheese

  • 8 oz. Fiesta blend shredded cheese (divided: ¼ cup for bean layer, ¼ cup for topping)

Guacamole Layer

  • 16 oz. guacamole (1 container)

Sour Cream Layer

  • 16 oz. sour cream (1 large tub) or plain Greek yogurt

Salsa Layer

  • 1 cup chunky salsa

Toppings

  • 2.25 oz. sliced black olives (1 small can, rinsed if oil-packed)
  • ½ cup cherry tomatoes, quartered (or other chopped tomatoes)
  • 3 tbsp chopped fresh cilantro (or parsley)

To Serve

  • Tortilla chips (optional, for serving)

Instructions

  1. Prepare serving cups: Set out eight 9-ounce clear, disposable cups on a flat surface for assembling your dip cups.
  2. Heat the refried beans: Place the refried beans in a large microwave-safe bowl and microwave for 1-2 minutes, stirring frequently until the beans are heated through.
  3. Mix seasoning and cheese into beans: Add the taco seasoning packet, 2 tablespoons of heavy cream, and ¼ cup of shredded cheese to the beans. Stir well until the cheese melts and the mixture is well combined.
  4. Adjust bean consistency: Stir the bean mixture several times and let it cool slightly so it’s thick but spreadable. If needed, add more heavy cream 1 tablespoon at a time to reach the desired consistency.
  5. Layer the beans: Spoon about ¼ cup of the prepared bean mixture into the bottom of each cup and spread evenly.
  6. Pipe the guacamole: Transfer all the guacamole into a piping bag or sealable plastic bag. Cut off one corner and pipe a ring of guacamole around the edge of each cup on top of the beans, then fill the center with remaining guacamole.
  7. Even out the guacamole layer: Use a spoon to smooth and even out the guacamole layer in each cup.
  8. Layer the sour cream: Transfer the sour cream to a separate piping or plastic bag. Pipe an even layer of sour cream on top of the guacamole in each cup and smooth it with a spoon.
  9. Add salsa layer: Spoon ¼ cup of chunky salsa over the sour cream in each cup and gently even out the layer with a spoon.
  10. Top with cheese: Sprinkle ¼ cup of shredded Fiesta blend cheese evenly over the salsa in each cup.
  11. Add final toppings: Garnish each cup with 1 tablespoon of sliced black olives, 1 tablespoon of quartered cherry tomatoes, and 1 teaspoon of chopped fresh cilantro.
  12. Serve: Optionally, garnish each cup with a tortilla chip on the side and serve the dip cups with additional tortilla chips for dipping.

Notes

  • You can use plain Greek yogurt instead of sour cream for a healthier alternative.
  • If you prefer a milder flavor, reduce the amount of taco seasoning used.
  • Make sure to rinse oil-packed black olives to reduce excess oil and saltiness.
  • These dip cups can be assembled a few hours ahead and refrigerated until ready to serve.
  • For a vegan variation, substitute refried beans, guacamole, and cheese with vegan-friendly options and replace sour cream with a plant-based yogurt.
